BAKED POTATO SLICE

INGREDIENTS
2 medium potatoes and 1 large sweet potato (or 4 medium potatoes only)
4 eggs
1 cup bacon, diced (you can also use ham if you prefer)
1 medium tomato, finely diced
1 large onion, finely diced
1 tablespoon of chopped parsley
1 cup grated cheese

METHOD
1. Preheat oven to 200`.
2. Grate potatoes and using your hands, squeeze the excess water out.
3. Beat eggs together in a large bowl.
4. Add potato, bacon/ham, tomato, onion, parsley and half the cheese, mix together well.
5. Spread the mixture into a well greased shallow baking dish and sprinkle with remaining cheese.
6. Bake uncovered for about 40 minutes or until browned.
7. Enjoy!
